<li>2½ oz cracked black pepper</li>
<li>2½ oz salt</li>
<li>2½ oz caraway seeds</li>
<li>2½ oz coriander seeds</li>
<li>1 ea star anise</li>
<li>¾ lb flour</li>
</ul>

<li>8 fl oz natural pork jus</li>
<li>2/3 lb Ratatouille, prepared</li>
<li>2/3 lb Truffled mashed potatoes, prepared</li>
<li>6 ea Thyme sprigs, picked, washed and on ice</li>

<h2><a href="http://blog.atlastravelweb.com/wp-content/uploads/2010/10/princessrecipetenderloin.jpg"></a>Preparation:</h2>
<p>Place the caraway seeds, mustard seeds, coriander seeds, and anise  seed in a dry pan and dry roast until golden. Cool slightly and place in  a blender and grind down to a powder. Add this mixture to the salt and  cracked black pepper. Add all of this to the flour and mix well.</p>
<p>Lightly roll the pork tenderloin through the spiced flour. Dust off all excess flour.</p>
<p>Heat oil in a heavy based sauce pan and add the butter.</p>
<p>Sear the pork tenderloin until well browned on all sides basting well  with the oil and butter. Remove from the pan. Place on a roasting tray  and into the oven at 275F for about 35 to 40 minutes. Remove from the  oven and allow to rest before carving.</p>
<p>Use a large spoon and place a quenelle of truffled mashed potatoes as  shown in the picture. Using a plating ring or cookie cutter place  ratatouille as shown in the picture.</p>
<p>Carve pork tenderloin, arrange as shown and add sufficient pork jus to accompany meat. Refer to the picture for guidance.</p>
<p>Garnish with thyme sprig.</p>

			<content:encoded><![CDATA[<p>Many cruise lines sell recipe books, but often if you have a favorite dish while cruising, ask your waiter and many times they will provide you with the recipe. Here is Carnival&#8217;s delicious pumpkin soup recipe.</p>
<p><strong>Ingredients</strong>:</p>
<li>2-1/2 Quarts Chicken Stock</li>
<li>1/2 Pound Onion, quarter</li>
<li>5-2/3 Ounces Leek, chunks</li>
<li>
<div>1-1/8 Ounces Garlic Clove</div>
</li>
<li>
<div>3-3/8 Tbsp Olive Oil</div>
</li>
<li>
<div>1-2/3 Cups Half and Half</div>
</li>
<li>
<div>1/4 Cup Heavy Cream</div>
</li>
<li>
<div>5/8 Ounce Chicken Base</div>
</li>
<li>
<div>1-1/4 Pounds Pumpkin Puree, roasted</div>
</li>
<li>
<div>Salt and Pepper to taste</div>
</li>
<li>
<div>Dash Nutmeg</div>
</li>
<p><strong>Directions:</strong></p>
<ol>

<div>Roast onions, leeks and garlic cloves in olive oil in a preheated oven at 300 degrees Fahrenheit for 30 to 45 minutes. Remove and puree in blender.</div>
</li>

<div>While the onions, leeks and garlic are roasting, take advantage and roast the pumpkin as well. The pumpkin should be whole until ready to use. Cut pumpkin in half and scoop out the seeds and strings.  Place pumpkin face down in a large baking pan with a 1/4 inch of water. Bake uncovered at 350 degrees for 45 minutes to an hour. Since the oven temperature is on 300 to roast the other vegetables, go ahead and cook the pumpkin at 300 degrees and once you remove the other items, increase the temperature to 350 and cook for an extra 15 to 30 minutes*  Let cool. Puree pumpkin in blender or food processor.</div>

<div>Bring stock, pumpkin puree, pureed vegetables and chicken base to boil. Simmer for 45 minutes.</div>

<div>Add Half &amp; Half and simmer.</div>
</li>
<li>
<div>Season with salt &amp; pepper.</div>
</li>
<li>
<div>Finish with heavy cream.</div>
</li>
<li>
<div>Top with nutmeg.</div>
</li>
</ol>
<p align="justify">This recipe serves 15 people. Adjust ingredients for smaller portions.</p>
<p align="justify">*Please note that the original recipe calls for roasted pumpkin, however it does not describe how to roast it, so just in case someone had not roasted a pumpkin before, I added the information on Step 2. Everything else follows the original recipe.</p>
