1 1/2cupsgraham cracker crumbs
1/4cupsugar
6 tbspmelted vegan butter or coconut oil
4flax eggs(4 tablespoons ground flaxseed mixed with 12 tablespoons water)
1canfull-fat coconut milk(14 oz)
1/2cupKey lime juice
1tbspgrated lime zest
Instructions
Preheat your oven to 350 degrees Fahrenheit.
In a medium bowl, combine the graham cracker crumbs, sugar, and melted vegan butter or coconut oil until well mixed. Press the mixture into the bottom and up the sides of a 9-inch pie dish.
In a separate large bowl, whisk together the flax eggs, coconut milk, Key lime juice, and lime zest until well combined. Pour the mixture into the prepared pie crust.
Bake the pie for 15-20 minutes, or until the filling is set and the crust is lightly golden.
Let the pie cool to room temperature, then chill it in the refrigerator for at least 3 hours.
To serve the pie, top it with coconut whipped cream or meringue, and garnish with additional lime zest if desired.
