What kind of ricotta do I use? You'll want to use whole milk ricotta, not part-skim. Whole milk ricotta has a richer, creamier texture, making the filling smooth and luscious.
What kind of crust is best? Buttery and flaky pie crusts work very well to complement the creamy ricotta filling. You can use store-bought or homemade pie crust. Just be sure they're unbaked before filling.
What ingredients go in the filling? Along with the ricotta, eggs help bind it and add richness. Then you can add mix-ins like ham, spinach, herbs, garlic, cheese, vegetables etc. Feel free to get creative with the ingredients!
How do I prevent a soggy bottom crust? Be sure to thoroughly drain any wet filling ingredients. Pre-bake the bottom crust for 5 minutes before adding the filling. And place the pie pan on a baking sheet in case of spills.

Ingredients
  

  • 2 pie crusts (9-inch), unbaked
  • 2 eggs
  • 15 oz whole milk ricotta cheese
  • 1 cup cooked ham diced
  • 1 cup frozen spinach thawed and drained
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan
  • 1 tsp dried Basil
  • 1/2 tsp dried Oregano
  • 1/4 tsp garlic powder
  • Salt & Pepper to taste

Instructions
 

  • Preheat oven to 375°F.
  • Whisk together the eggs and ricotta cheese in a large bowl until smooth. Stir in the ham, spinach, mozzarella, Parmesan, basil, oregano, garlic powder, salt and pepper.
  • Pour the mixture into one of the pie crusts. Top with a second crust, sealing edges, and cutting slits to allow steam to escape.
  • Bake for 35-40 minutes, until golden brown on top. Let cool for 10 minutes before slicing.
